Since 1974 the Diaz Family has been serving their unique version of Tex-Mex favorites. If care is taken in preparation, Mexican food can be a wonderfully nutritious cuisine - full of whole grains, legumes and fresh vegetables. They use absolutely no lard in their cooking -- only 100% pure peanut oil where needed. They serve natural whole grain brown rice prepared Spanish style. They use whole wheat and unbleached flours and only a moderate amount of sea salt, so that other flavors come through -- flavors such as fresh garlic, herbs, beneficial spices and fresh peppers. They never add artificial flavor enhancers or preservatives. They offer tofu as a delicious protein choice in tacos, enchiladas, and salads. They serve organic alfalfa sprouts, grown especially for them. These can be substituted for lettuce upon request!
